Today I want to share with you all a really good way to cook chicken thighs with the bone. I’m so glad I discovered it that I’m super stoked to share!
I preheat the oven to my absolute favorite temperature: 425℉. You can roast veggies at this temp and bake chicken, I mean, it’s so versatile!
While that’s happening, I place the chicken in a bowl and pour enough avocado oil to cover it and add some spices. I like to use spice mixes, like tuscan spices or Herb de Provence. If instead I’m using a marinade, I’ll let that do its thing in the fridge for an hour or two.
Before placing the thighs on the parchment covered sheet pan, I make sure it’s all good and covered with the marinade.
Now, the secret is my secret ingredient that makes it crispy. And that secret ingredient is:
baking powder!
I add a couple of tablespoons to the mixture, mix it all together really well, place each thigh on the parchment-papered-pan and pop it in the oven!
Let it cook for 35-40 minutes.
The drippings are even really good!
I like baking chicken thighs this way because they also reheat really nicely. When you’re ready for a second delicious meal with them, just pop them in a 425° oven but only for like 10-15 minutes this time. They crisp right back up!
